The La Collina Agricultural Cooperative was founded in 1975 by a group of 12 young men from Reggio Emilia, who returned from travels in Latin America with a strong conviction to create a biodynamic and polycultural farm that specialized in producing traditional-style Lambrusco from their tiny 5HA of vines. The "Quaresimo" (a reference to lent) is made from a traditional blend of Lambrusco grape varieties (Salamino, Maestri, Grasparossa, Malbo Gentile) from 20 year-old vines and shows the traditional "frizzante" bubble of traditional Italian sparkling wine (a softer, frothy style) and bursting with ripe, sunny red fruits. Yes, this goes with the Italian classics like pizza and ragu but is also terrific as a compliment to whatever you happen to have on the grill. Best enjoyed in the smallest, cheapest little glasses you have on hand, like a true citizen of Emilia Romagna!
